This property specifies the type of object that an object will combine with in your inventory. For example, healing potions have a combine type of HealingPotion, so all healing potions the player picks up are stacked into the HealingPotion category. Any differences that the object may have are lost - it merely increases the Stack Count of the object already in your inventory. Objects must have a Stack Count to be stacked.
